Why Wood Is Safer Than Plastic

The Problem with Plastic

Almost everyone has a plastic cutting board. They’re cheap, disposable, and somewhere along the way, you were led to believe that they were more sanitary for cutting raw meats. But that assumption is false.

Sure, you can throw a plastic cutting board into the dishwasher, on it’s highest heat and sanitization settings. But as you cut into a plastic cutting board, you are making knife grooves that get deeper and deeper with every cut? Those grooves collect the juice from whatever you are cutting and water, the one thing that bacteria need to grow. And as those grooves get deeper, even the most powerful dishwasher can’t penetrate them to get them fully clean or fully dry. 

So the juice and water sit in those deep grooves and bacteria grow. And the next time you cut on that board and your knife goes into one of those grooves, it brings the bacteria back with it onto your food; in addition to cutting off bits of microplastic from the board which you end up ingesting with your food.
